I am going to give you a recipe to make tomato jam. First thing first - your fruit must be firm not over ripe.
Here are the steps:-
1. Boil to remove the
skin.
2. Rub the bottom of a cooking pot with a little butter to stop it
sticking.
3. Then add your tomatoes and just cover with water
and boil until tender enough to mash with a potatoe
masher.
4. Once you have mashed your tomatoes then add
sugar.
5. One pound of mashed tomatoes to one pound of
sugar.
6. Add sugar and boil quickly until sugar forms a syrup. This will take about 30min. Do not over boil. You check on it
by taking some out and it must be like a jelly.
Remember
when it cools it will set.
Your jars or bottles must be sterilized before you put the
jam in. You can do this by placing jar in boiling water.
7. Once jam has cooled put into jars.
8. Take a candle and light it and drop the wax on top of the
jam. This seals it.
Your jam will keep for over a year.
If too much sugar is used jam will crystallize.
Too much
stirring also causes crystallization.
You can also add some fresh ginger when you add the sugar.
